This week, Mikey was invited to London's hottest new cocktail bar, Aqua Spirit (above), where top mixologist Paulo Figueiredo (below) served up a spectacular Rose Li – easily one of the yummiest cocktails we've ever had the pleasure of tasting on Cocktail Of The Week…!

UNCLE MIKEY SAYS: "I can safely say this is the best cocktail I've had in years. It all sounded a bit sickly for my liking, but once I tasted it, I was smitten (and had to order a second one, obviously!) Even though Paulo made it look like a work of art, I'm sure it's quite easy to try at home. And if you can manage to get hold of some rose buds, they really do add the perfect finishing touch!"

HOW TO MAKE THE ROSE LI:
10ml rose liqueur
10ml lychee liqueur
Top up with Champagne (Paulo used Louis Roderer)
rose buds for decoration (sounds very twee, but they did look v pretty!!)
